Busha Brownes
PASTA with SWEET POTATOES & ROASTED ONIONS

1 lb.Pasta (Macaroni type)
3 lb.Sweet Potatoes, diced
3 lb.Red Onions, coarsely chopped
½ cup Port or Balsamic Vinegar
Olive Oil as needed
1 cup Parsley, chopped
1 bottle Busha Browne's Love-Apple Sauce (6.5 oz.)

Toss Potatoes with olive oil, salt and pepper. Roast in a 375 F oven. Toss Onions with olive oil, vinegar, salt pepper and sugar. Roast in a 375 F oven, until nice and brown, about 25-35 minutes. Cook Pasta. Toss everything together, adding more Love-Apple Sauce as desired. Serve at room temperature. Serves 6.


TROPICAL SALSA
1 Lg. Ripe, firm banana, peeled, and diced
1-2 Tbsp. Fresh Lime Juice
2 tsp.Fresh Ginger Root diced or grated
1 Red Bell Pepper, seeded and diced
2 Tbsp. Fresh Cilantro or mint, chopped
1 Scallion, trimmed and finely chopped
2 Tbsp. Busha Browne's Banana Chutney
1-2 tsp. Olive Oi1
tsp. Pukka Hot Pepper Sauce
Salt and freshly ground pepper, to taste

In a small bowl, coat diced banana with lime juice. Add all remaining ingredients. Toss lightly to mix. Taste and adjust seasonings. Makes about 1- 1/2 cups. [top]


AVOCADO AND PAPAYA GAZPACHO
Said of this recipe: "Pukka does not burn the mouth. It warms the heart and soul."

1 cup Firm, ripe papaya, finely chopped
1 cup Firm, ripe avocado, finely chopped
1/3 cup Sweet green pepper, finely chopped
2/3 cup Firm, ripe tomatoes
1/4 cup Sweet onion, finely chopped
3 cups quality tomato juice
3 cups quality pineapple juice
tsp. Cilantro, finely chopped
tsp. Fresh lime or lemon juice
tsp. Busha Browne's Pukka Hot Pepper Sauce
Salt and freshly ground black pepper taste

Combine all the finely chopped ingredients in a glass bowl and chill for several hours. Serve icy cold in pre- chilled earthenware bowls garnished with a few freshly ground papaya seeds, a sprig of cilantro or young celery tops. Serves 6. [top]


SPICY STEAMED MUSSELS
3 lbs .Marine Mussels1
C. White Wine
2 tsp. Busha Browne's Jerk Seasoning
1/2 C. Scallions, thinly sliced
1 med. Shallot, diced small
Lemon Juice

1. Debeard mussels.
2. Place mussels in a large sauce pan. Pour shallot, scallions, Jerk Seasoning, lemon juice and wine over the mussels.
3. Cover with a tight lid and bring to a boil. Steam on medium heat for 4 minutes or until shells open. Agitate the pan during this time to cook the mussels evenly.
Serves 6 as an appetizer; 3 as a main course. [top]


GRILLED JERK CHICKEN
1 lb. Boneless Chicken breasts
lemon, juiced
1 Tbsp. Olive Oil
2 tsp. Busha Browne's Jerk Seasoning

Rub the chicken with lemon juice and olive oil, then coat with Jerk Seasoning. Allow to marinate several hours. Grill fry or boil in the usual way. Recipe can also be used with shrimp, other seafood and fish, as well as beef , pork or lamb - roasts, chops,


PLANTATION PORK TENDERLOIN
2 Pork Tenderloins, peeled and cleaned
6oz. Spicy Fruit Chutney

Cut a slit in Tenderloin by inserting a boning knife into the head of the tenderloin and working it down towards tail. The cut is inside the tenderloin, running from one end through the centre to the other end of the meat After cut is made, use finger to widen the opening then fill the tenderloin with 3 oz. of Spicy Fruit Chutney, working it downwards to the tail. When Tenderloin is full, marinate for 2-4 hours (or overnight) in Planters Marinade. Grill or roast until cooked through, 7-10 minutes each side turning occasionally. Slice on the diagonal for best presentation. [top]


PLANTERS MARINADE
5 tbsp Planters Sauce
4 tbsp Myers Rum
3 tbsp Pineapple Juice
2 tbsp Pukka Sauce
1 tbsp Molasses or Brown Sugar

Combine all ingredients in mixing bowl and stir until blended well. Use as marinade for Plantation Pork Tenderloin.


JERK CHICKEN SALAD
4 lb. Boneless Chicken Breast
4 oz. Busha Browne's Jerk Seasoning (or less, to taste!)
2 oz. Olive Oil
4 lb. Onion, cut julienne
1 lb. Red Pepper, cut julienne
4 oz. Olive Oil
4 oz. Chopped Parsley

Mix together Jerk Seasoning and 2 oz. Olive oil. Mix with trimmed chicken breast. Let marinate at least one hour, preferably longer. Lay flat in pan, cover with foil, bake 10 minutes at 325 or until done. Cool. Cut into strips. Sauté onions and peppers in olive oil in several batches. Mix with chicken and parsley Serve as a sandwich on sourdough roll, or as entre with mixed green salad.


SWEET POTATO - OVEN FRIES with JERK SEASONING
4 Sweet Potatoes, cut into wedges
2 Tbsp. Canola or vegetable oil
2 tsp. Busha Browne's Jerk Seasoning

1. Combine oil and jerk seasoning in a mixing bowl.
2. Add potatoes, skins on, cut into lengthwise wedges.
3. Roast in a 375 oven until potatoes are tender, 15-20 minutes. [top]
