Grandmother's Thumbprint Cookies


Ingredients:
½ cup shortening
½ teaspoon salt
¾ light brown sugar
,firmly packed
1 ¼ cups rolled oats
1 ¾ cups finely chopped
walnuts or pecans
1 egg
¾ cup all-purpose flour
1 teaspoons vanilla extract
Clearbrook Farms Preserves
or Spreadable Fruit

Instructions: In a large mixing bowl, cream together shortening and sugar. Add egg and vanilla and mix well. Gradually sift in the flour and salt and blend thoroughly. Add oats and ¾ cup of nuts and mix well. Cover and refrigerate until well chilled.

Pre-heat oven to 300º F

Shape the chilled dough into balls about 1 inch in diameter. Roll balls in the remaining nut to coat and place (about 2 inches apart) on greased baking sheets. Make a thumbprint on the top of each cookie ball and fill in the "dent" with your favorite Clearbrook Farms Preseveres or Spreadable Fruit.

Bake in the center of the oven for 25 to30 minutes or until lightly browned. Makes about 35 cookies. [top]


Fruit Basting & Glazing Sauces

Make your own Clearbrook Farms basting or glazing sauce using the following formula:
6 tablespoons Clearbrook Farms Preserves or Spreadable Fruit
2 tablespoons white vinagar
2 teaspoons Dijon mustard
¼ teaspoon spice

For Chicken :
Follow basic formula, using Clearbrook Farms Bitter-Sweet Orange Marmalade and ¼ teaspoon ground ginger for the spice. In addition to the vinegar and mustard, add 1 tablespoon of soy sauce.

For Shrimp:
Follow basic formula, using Clearbrook Farms Califoria Apricot or Peach, ¼teaspoon ground ginger plus 1 tablespoon horseradish. (Or, simply use Peach-Ginger Spreadable Fruit with added horseradish.)

For Pork:
Follow basic formula, using Clearbrook Farms Oregon Red Raspberry and ½ teaspoon ground ginger, plus 1 tablespoon soy sauce and four tablespoons butter. This gloosy sauce requires that yiy whisk together and heat the jam, vinegar, mustard, ginger and soy saue. Then, just before serving, stir in the butter until melted and smooth.

For Ham:

Follow basic formula, using Clearbrook Farms Michigan Red Tart Cherry and ¼ teaspoon of ground all-spice. [top]



Berry Fruit Bars

Ingredients:
2 cups all-purpose flour
1 ½ cups sliced almonds (divided)
1 cup cold butter,sliced
1 cup brown sugar, firmly packed
1 teaspoon vanilla extract
1 1/3 cup Clearbrook Farms Seedless Red Raspberry, Blackberry, Blueberry,
Strawberry
or even Boysenberry Preserves
or try Triple-Berry Speadable Fruit

Instructions: In the bowl of a food processor fitted with the blade, combine the flour, 1 cup of the almonds, the butter, brown sugar and vanilla. Process untill the mixture resmbles coarse crumbs. Reserve ¾ cup of the crumb mixture. Preheat the oven to 350ºF. Press all of the remaining crumb mixture into an 11" x 17" jelly roll pan (ungreased), building up to ½ -edges against the sides of the pan. Pre-bake this crust for 10-15 minutes or until lightly browned. Remove from the oven and spread te preserves over the crust. Note: Microwaving the jam for 20 to 30 seconds will make it easier to spread. Sprinkle the reserved crumbs and the remaining ½ cup of sliced almonds over the preserves. Return to the oven and bake for 25 to 30 minutes or until lightly browned. Cool and cut into bars.
Makes 36 ½" x 1 ½" bars.[top]



Apricot Chicken
Ingredients:
¾ Clearbrook Farms California Apricot Preserves or Spreadable Fruit
1 cup bottled Russian Dressing
¼ envelope (2 heaping teaspoons) dehydrated onion soup mix
6 to 8 bone-in chicken breasts (about ½ pound each)

Instructions: Pre-heat oven to
400ºF

In a mixing bowl, thoroughly combine the apricot jam, dressing and soup mix.

Place the chicken breasts skin-side up in a baking dish that's been sprayed with vegetable oil spray (like Pam). Spoon the apricot mixture over the chicken breasts, cover the pan and bake until the chicken is fully cooked, about 35 to 45 minutes. (Chicken is done when a thermometer inserted in the center of the breast reads 175ºF.)

For best results, uncover the pan for the last ten minutes of baking time and baste chicken with the apricot sauce. [top]


Cobbler
1. Pre-heat oven to 450ºF.

2. Combine 1 cup of all-purpose flour with ½ teaspoon of salt,1 ½ teaspoons of baking powder and 2 teaspoons of sugar. Add 3 tablespoons of butter, cut into tiny pieces.

3. Blend the butter into the flour until the mixture resembles coarse corn meal. Stir in 6 tablespoons of milk or cream and blend just until the dough holds together.

4. Spray an 8-inch square baking pan with vegetable oil spray, then fill the pan with one canning jar of Clearbrook Farms Fruit Tart (Apple or Red Tart Cherry are popular).

5. Pinch off sections of the cobbler dough, flatten with your fingers until the pieces are about ½ inch thick, then arrange the pieces to overlap and cover the Fruit Tart. Sprinkle with a teaspoon of sugar.

6.Reduce the temperature to 350º and bake for approximately 40 minutes or until the crust is golden brown. (Serve warm with ice cream!) [top]

Here's another creative but simple category of dessert building. No 1-2-3's here, but a list of tips and techniques that should get you rave reviews and get you out of the kitchen fast! Start with a boxed mix layer cake or a pre-made angel food or pound cake, then...

• Spread slices of angel food or pound cake with lemon or red raspberry Clearbrook Farms Fruit Tart, then top with fresh berries and/or whipped cream.

• Split a layer of chocolate cake into two or three layers and spread Clearbrook Farms Fruit Tart between the layers and on top. Garnish with whipped cream and shaved chocolate or chocolate "jimmies".

Pies
1. Purchase or prepare dough for a 2-crust pie; pre-heat oven to 450ºF
2. Fit one round of dough (rolled about1/8 inch thick) into an 8-inch pie pan and trim to an inch outside the outer rim of the pan.
3. Fill crust with canning jar of Clearbrook Farms Fruit Tart (Apple and Red Tart Cherry are perfect for pie).
4. Top with the second round of dough (pricked with a fork or knife) or lattice strips of dough, seal the edges and "crimp" by pinching the dough into "v's" or by using a fork.
5. Reduce oven temperature to 350ºF and bake the pie for approximatel 40 minutes or until the top crust is golden brown. [top]

Crisps
1. Pre-heat oven to 450ºF.
2. Combine the following ingredients in a mixing bowl:¼ cup all-purpose flour, cup rolled oats,1/2 cup (packed) brown sugar,¼ cup of butter and ¾ teaspoon ground cinnamon.
3. Work the mixture together lightly with your fingers until crumbly.
4. Spray an 8-inch square baking pan with vegetable oil spray, then fill the pan with one canning jar of Clearbrook Farms Fruit Tart
5. Sprinkle the crumbly topping even over the Fruit Tart.
6. Reduce oven temperature to 350ºF and bake for approximately 30 to 40 minuted or until the crust is golden brown and crispy.

Tarts
1. Use Clearbrook Farms Sweet Tart Shells; the one bite size is a great sweet tease with coffee or tea, and the-3 inch size makes a perfect individual portion.
