Spicy Cucumber Salad

Ingredients:

2 Medium cucumbers, pared, seeded & Sliced
1 Medium serrano or , jalapeno pepper Seeded thinly sliced
1/2 Cup Melina's Champaign Vinegar
1/4 Cup Diced red onion
1/2 Tsp caraway seeds, toasted
1/4 Tsp salt
2 Tbsp Olive Oil

In a small bowl, combine cucumbers, pepper, vinegar, onion, caraway seeds and salt.
Just before serving, drain cucumber mixture discarding liquid. Drizzle with Olive Oil.
