Montego Bite Layered Potatoes
Zesty Montego Bite Chicken Marinade
Suggestions: Use 2 Tbsp. per lb. of meat. Coat chicken, pork loin, or steak with a bit of olive oil and sprinkle Montego Bite over the top before baking or grilling. For a fabulous marinade combine: 1-2 Tbsp. of this blend with 1 cup OJ, juice from 2 limes, 1 tsp. olive oil and 1 Tbsp. soy sauce. Marinate meat for 1 hour or more then either bake or grill. Reduce marinade and pour over meat. Try a dash of Montego Bite on top of a baked potato for a true taste sensation.

Montego Bite Layered Potatoes

  • 3-5 lbs. baking potatoes
  • 1 egg
  • 1 stick butter or margarine
  • 1 cup milk
  • 4 Tbsp of Montego Bite
  • Slice 3-5 lbs. of well-washed baking potatoes with skins left on. In a lightly greased baking dish, put down one layer of potato slices.

    Dot potatoes with 3 Teaspoons of butter or margarine.

    Sprinkle 1 Tablespoon of Montego Bite over potatoes.

    Repeat the above until baking dish is full.

    Mix 1 cup milk with 1 egg and pour over layered potatoes. Bake at 375°-400° for approximately 1 hour.

    (This recipe can be varied by adding one or more of the following: sliced onions, shredded cheese, sliced jalapeno peppers or diced tomatoes)


    Zesty Montego Bite Chicken Marinade

  • 4 chicken breasts
  • 4 Tbsp Montego Bite
  • 2 Tbsp good Olive Oil
  • 2 Tbsp soy sauce
  • 4 Tbsp white wine vinegar
  • 1/2 cup orange juice 4 Tbsp fresh lime juice
  • Place chicken breasts in a marinade using: Montego Bite, olive oil, soy sauce, white wine vinegar, orange juice and lime juice.

    Marinate 1 hr. or more and then bake or grill chicken as usual.

    Boil leftover marinade and pour over cooked chicken.

    This marinade is also fantastic on pork,lamb, beef, shrimp or other grilled meats.
