White Chocolate Amaretto Cheesecake
This dreamy creamy blend of white chocolate and amaretto is rolled in sliced almonds. For a new twist, try serving on ginger snaps.

Amaretto Snap Cheesecake
INGREDIENTS:
1 cup crushed ginger snap cookies (crush in food processor
4 Tbs. melted butter
2 Tbs. sugar
White Chocolate Amaretto Mix
8 oz cream cheese
2 Tbs. butter
8 oz carton of prepared whipped topping
DIRECTIONS:
Pre-heat oven to 350.
Combine crushed cookies, melted butter and sugar in 8 inch pie plate. Press into bottom and sides of pie plate. Bake for 8 to 10 minutes. Let cool.
Combine White Chocolate Amaretto Mix with cream cheese and butter. Stir until smooth. Fold in 8 oz prepared whipped topping and pour into prepared ginger snap crust.
Garnish with almond Topping. Chill until ready to serve.
Makes 8 servings.

Key Lime Bars
Wind & Willow Key Lime Cheeseball Mix,
1/2 c. margarine, room temperature,
1 c. flour
1/4 c. powdered sugar and
2 eggs
DIRECTIONS:
Preheat oven to 350.
Blend margarine, graham topping mix, flour and ¼ c. powdered sugar and press into an 8 x 8 nonstick baking pan. Bake 15 minutes.
Beat eggs and mix in key lime cheeseball mix. Pour over crust and continue baking 20 minutes.
Cool and dust with powdered sugar or glaze with a mixture of 1 c. powdered sugar and 1 T. fresh lime juice.

INGREDIENTS:
1 Package Wind & Willow Pumpkin Pie Cheeseball Mix
1 muffin or quick bread (1 loaf size) mix
DIRECTIONS:
Take any quick bread or muffin mix: (white, wheat, oatmeal, cranberry, etc.) Mix as directed. Stir in pumpkin mix packet from Cheeseball Mix. Pour batter into loaf pan or muffin tin as directed and sprinkle top with graham topping packet. Bake as directed. Easy enough to bake for breakfast before heading out to the pumpkin patch!
