Black Teas - Royal Keemun Mao Feng

Black teas are made from leaves that have been fully oxidized, the leaf is spread out and left to wilt naturally, before being fired, producing a hearty deep rich flavor in a colored amber brew. It is the oxidation process, oxygen coming into contact with the enzymes in the tea leaf, that distinguishes black teas from green. The oxidation process is also known as fermentation.

Keemun Hao Ya
One of the most important black teas from China, Keemun comes from the town of Qi Men in the Anhui province. This region was originally a green tea producing region until the black tea process was introduced to the region of Qi Men in the 19th Century. It was at that time that the famous Keemun black tea was invented. The result was a prized black tea with a remarkable profile. There are many grades of Keemun: lower grades are used as a base for many of the mass market breakfast blends on the market. The higher grades are quite rare as few artisans still make the tea in the old way. Our Keemun is a special grade made by old school artisans in Qi Men Town. The grade is known as Hao Ya which is the top grade of Keemun available. Its rich flavored and;[ deep burgundy colored infusion have a well pronounced aroma and flavor which suggests roasted sugar cane, cacao, port wine and notes of fresh pine needles.

Hot Tea Brewing Method:
Bring freshly drawn cold water to a rolling boil. Place 1 tsp. per cup into a teapot. Pour the boiling water into the teapot. Cover and let steep for 3-5 minutes according to taste (the longer the steeping time the stronger the tea). Repeat until the flavor of the tea is exhausted


Iced Tea Brewing Suggestion:

(to make 1 liter/quart):  Place 5 teaspoons of tea into a teapot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over the tea. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into your serving pitcher straining the leaves. Add ice and top-up the pitcher with cold water. Garnish and sweeten to taste. [A rule of thumb when preparing fresh brewed iced tea is to double the strength of hot tea since it will be poured over ice and diluted with cold water].
