A.K.A Red Bush Tea, South African Red Tea
To
Prepare Rooibos Teas: Use fresh cold filtered or bottled water.
Add 1-2 teaspoons of any Rooibos Tea per cup. Pour boiling water over
the Rooibos. Steep and cover for 4-7 minutes. Will not become bitter
with over-steeping. Rooibos Teas are good for 2 consecutive steepings.
To Prepare Iced Rooibos Teas: (to make 1 gallon): Brew 1/2oz
of Rooibos in 1/2 gallon of water. Steep for about 20 - 25 minutes or
just leave the Rooibos inside the container while the tea cools down.
Strain and fill container with fresh cold water. Add ice and sugar to
taste

The story of Rooibos starts around the turn of the century in South Africa’s beautiful Cedarberg region. It was the locals of the area who first discovered that the fine needle like leaves of the wild “Aspalathus Linearis” plant made a tasty aromatic tea. It was they who first harvested the plants, chopped them with axes and bruised them with hammers leaving them to ferment before drying in the sun. Rooibos seeds are planted during February and March. They are tended for 18 months after which they are harvested. Cut Rooibos is bound and milled to a uniform length then bruised between rollers to trigger the fermentation process, which results in the characteristic flavor and sweet aroma.
It has a very soothing effect on the central nervous system and can be strongly recommended for people suffering from irritability, stress, headaches, nervous tension and mild depression or hypertension.

Hot tea brewing method: Bring freshly drawn cold water to a rolling boil. Place 1 teaspoon of Rooibos for each cup into the teapot. Pour the boiling water into the pot, cover and let steep for 4 minutes( Rooibos can steep even longer without getting bitter). Drink it with or without milk, honey or sugar. Add lemon or mix it with fruit juices for a lovely blend.
Iced tea brewing method: (to make 1 gallon): Brew 1/2oz of loose tea or 6-8 tea bags in 1/2 gallon of water in container for about 6 to 12 minutes. Leave the Rooibos tea inside the container while the tea cools down. Dispose of the tea bags or strain if using the loose tea and refrigerate. Add ice and top-up with cold water. Garnish and sweeten to taste. Try adding lemon, honey or other natural juices.
